Ragi cookies has flavour of cocoa and cinnamon with goodness of chironji
1/2 cup ragi flour lightly roasted
1/4 cup butter at room temperature
2 tbsp powdered sugar ( preferably brown)
1/2 tsp cinnamon powder
1 tbsp cornflour
Pinch of baking powder
Pinch of baking soda
1 tbsp chironji
1 tbsp kalya cocoa powder
First sieve dry ingredients ragi flour,cocoa powder, cinnamon.powder, baking powder and baking soda.
Now in a mixing bowl beat butter and powdered sugar. To this add sieved dry ingredients.
Mix well and add few drops.of chilled water if required to bring dough together .To this add half chironji and mix well.
Now divide dough in equal parts and stud emaining chironji seeds. chill.in fridge for 20 mins.
Bake in a preheated oven at 180 degree for 18-20.mins
Cool on cooling rack before filling airtight container.
Bake cookies after chilling in fridge for 20 mins for crisp texture.
