Ingredients
- Spring onion bulbs- 3
- Spring onion grrens- above 3bulbs
- Coriander leaves- 1/2bunch including roots
- Coriander seeds- 1tbsp
- Cumin seeds- 1tbsp
- Peppercorns- 1/2tbsp
- Lemongrass- 3inch piece
- Kaffir lime leaves- 3small
- Lemon zest- 1tbsp
- Green chili- 3
- Garlic- 6
- Galangal- 1inch piece
- Onion- 1small
- Salt
- Sugar to taste
- Oil- 2tbsp
- Coconut milk- 200ml
- Broccoli- 4florets
- Mushrooms- 4
- Long beans- 4
- Green bell pepper- 1/2
- Red bell pepper- 1/2
- Baby corn- 3
- Lemon juice- 1tbsp

Instructions
- Heat kadai and dry roast cumin, coriander and peppercorns and keep aside
- Clean all the ingredients
- In a blender jar add roasted spices, lemongrass, Kaffir lime leaves, onion, spring onion greens and bulb, coriander leaves, galangal, lemon zest, garlic and a make a smooth paste
- Clean and cut all the vegetables.
- In a kadai add 1tbsp of oil and add all the cut vegetablesand little salt and saute up to little soft. remove from kadai and keep aside.
- In the same pan add one more tbsp of oil and add curry paste and saute up to raw smell goes
- Add saute vegetables to the masala and cook for a couple of mins. Then add 1/2cup water and coconut milk and mix
- Add salt, sugar and allow to boil. Cover this cook up to all the veggies are cooked properly.
- At last add lemon juice and mix
- Serve hot with steamed rice or fried rice
