  • Heat kadai and dry roast cumin, coriander and peppercorns and keep aside
  • Clean all the ingredients
  • In a blender jar add roasted spices, lemongrass, Kaffir lime leaves, onion, spring onion greens and bulb, coriander leaves, galangal, lemon zest, garlic and a make a smooth paste
  • Clean and cut all the vegetables.
  • In a kadai add 1tbsp of oil and add all the cut vegetablesand little salt and saute up to little soft. remove from kadai and keep aside.
  • In the same pan add one more tbsp of oil and add curry paste and saute up to raw smell goes
  • Add saute vegetables to the masala and cook for a couple of mins. Then add 1/2cup water and coconut milk and mix
  • Add salt, sugar and allow to boil. Cover this cook up to all the veggies are cooked properly.
  • At last add lemon juice and mix
  • Serve hot with steamed rice or fried rice
