Thai Cucumber Salad is a quick, delicious and refreshing salad. It is best when served along with appetizers.

Ingredients
- 2 Cucumber
- Salt to taste
- 1 Red onion small sliced
- 2 teaspoon Peanuts roasted, chopped
- Cilantro or spring onion, I used chopped spring onion greens for garnishing
Dressing Ingredients
- 2 teaspoon Sugar
- 4-5 teaspoon Water
- 5 teaspoon Sweet chili sauce
- 1 teaspoon Apple cider vinegar

Instructions
- Peel the cucumber skin and cut it into pieces.
- Add salt to the cucumber, mix it well and set it aside in the fridge for 10-15 minutes.
- In the meantime make the dressing, take all the ingredients in a small sauce pan and mix it well.
- Turn on the heat and cook the sauce for 3-5 mins and let it slightly thicken. After this time, turn off the heat and let it cool down completely.
- Take the cucumber out from the fridge and drain off the salt water if any.
- Toss the cucumber and onion well, then mix them with the dressing.
- Top it with the peanuts, spring onion greens and serve.
