Thai Cucumber Salad is a quick, delicious and refreshing salad. It is best when served along with appetizers.

  • 2 Cucumber
  • Salt - to taste
  • 1 Red onion - small sliced
  • 2 tsp Peanuts - roasted, chopped
  • Cilantro - or spring onion, I used chopped spring onion greens for garnishing

Dressing Ingredients

  • 2 tsp Sugar
  • 4-5 tsp Water
  • 5 tsp Sweet chili sauce
  • 1 tsp Apple cider vinegar


  • Peel the cucumber skin and cut it into pieces.
  • Add salt to the cucumber, mix it well and set it aside in the fridge for 10-15 minutes.
  • In the meantime make the dressing, take all the ingredients in a small sauce pan and mix it well.
  • Turn on the heat and cook the sauce for 3-5 mins and let it slightly thicken. After this time, turn off the heat and let it cool down completely.
  • Take the cucumber out from the fridge and drain off the salt water if any.
  • Toss the cucumber and onion well, then mix them with the dressing.
  • Top it with the peanuts, spring onion greens and serve.
