Pani phaler mishti muitha (water chestnut sweet)
Pani phal means singhada this sweet is made by boiled chestnut, rice flour and sweet coconut. In early days in rural areas people have simplicity they don't bother for garnishing. They just eat pure food with less ingredients and less efforts.

Ingredients
- 1 cup water chestnut paste
- ½ cup rice flour
- 2 tbsp grated coconut
- 2 tbsp grated jaggery
- 2 tbsp chopped dates
- Pinch of green cardamom powder
- Coconut milk for garnishing

Instructions
- Boil chestnut flour and peel off the skins then make a paste.
- Melt the jaggery add grated coconut, chopped dates and green cardamom powder. Stir continuously until cook. Keep aside for fillings.
- Now take the mashed water chestnut add rice flour to make a dough. It is necessary to add the rice otherwise it may crack. Make a ball with the dough.
- Stuffed with sweet coconut and give round shape. No need to give fine shape. Just close with all fingers that is the beauty of the recipe. That's why it is called muitha means muthi.

- Now heat a clay pot keep banana leaves and rub with little ghee. Keep the chestnut balls and cover clay lid. Sprinkle with little water just to give a vapour to cook.
- After10 minutes it will ready to serve. It can be served with coconut milk and sweet coconut. In other way divide the cooked chestnut ball pour either honey or jaggery syrup
