So why not surprise them by making this rosy ice cream at home right from scratch.Today we have shared a classic strawberry ice cream recipe that has a smooth and velvety texture. This homemade creamy-dreamy ice cream is made up of fresh strawberries for a flavor burst.Strawberry ice cream can be a little bit tricky to master. It's often blended in taste and can easily turn icy in texture. Follow this recipe and your strawberry ice cream will be neither of those things. It will be full of fresh strawberry flavor and super creamy texture. Fresh strawberries impart the perfect light pink color to this ice cream. But if you want it a little bit dark you can add 1-2 drops of red food coloring to the mix as well.

Ingredients
- 1 cup Strawberries finely chopped, fresh
- ¾ cup Granulated Sugar
- 1 cup Milk full fat, chilled
- ¾ cup Cream chilled, low fat
- 1 tsp Vanilla extract
- 1 tsp Salt or as per taste
- ¼ cup Coconut Oil of refined
- 1-2 drops Food Coloring red, optional
- 2 tbsp Vodka

Instructions
- Put chopped fresh strawberries and ¾ cup of sugar in a saucepan over a high flame and bring it to a boil.
- As it starts to boil, give it a stir and reduce the heat to a simmer for the next 5 minutes.
- Remove the pan from the heat and let it cool at room temperature. Pour this into a blender and blend on high until you get a smooth puree. Keep these pureed strawberries in the fridge to cool.
- Whip all above given ingredients in a blender till smooth (chilled milk, chilled cream, strawberries puree, coconut oil, vanilla extract, salt, and sugar).
- Blend it well until you get a thick consistency of whipped cream.
- Don't over mix as the cream mixture will deflate.
- Pour this mixture into a shallow ice cream box or an airtight container.
- Keep the mixture in the freezer for the ice cream to set for 3 hours.
- When the ice cream is semi-set, take out the ice cream container from the freezer and let it sit at room temperature for some time.
- Put this semi-set ice cream in a blender and add 2 tablespoons of vodka to it.
- You need to whisk it, again and again, every 15-20 minutes for 4-5 times as this will break up the ice crystals.
- Whip till this mixture is soft serve, smooth, creamy, light, and raised up in volume.
- Pour whipped mixture in the same ice cream container or box and keep it again in the freezer to set.
- When properly set, serve strawberry ice cream plain or top it up with your favorite sauce. You can also use this strawberry ice cream to make shakes, sundaes, or smoothies.

- This strawberry-flavored ice cream with visible bits of strawberry dots throughout can be served plain.
- Just scoop out your sweet creamy delight in a bowl and pour some strawberry sauce or honey over it.

- It can be garnished with jellies, creamy wafers, and sprinkles too.

- As homemade ice creams do not contain stabilizers they won’t retain their creamy texture for a long time. So try to consume it within a day or two.

- Making this ice cream at home with fresh strawberries is a better option as it is free from artificial syrups and stabilizers.
