Tofu In Spinach Curry (Gluten-Free Cooking)

I enjoy giving healthy twists to the usual traditional recipes. Today I got hold of Palak Paneer 🙂 which most of us enjoy eating..but today I am twisting the recipe & giving it a more healthier shape. Tofu is something we guys generally don't like eating because of its bland taste, but if you see the enormous health benefits of Tofu you will surely include this in your routine. Tofu is naturally gluten-free and low calorie, contains no cholesterol and is an excellent source of protein, iron, and calcium, combining this power packed food with another super food ie Spinach will give you a complete nutritious dish for your dinner table. Ingredients
- 200 grams Tofu
- 1/2 kg Spinach
- 1 tej patta
- 1 black cardamom
- 1 tbsp paprika
- 1/2 tbsp garam masala
- 2 big tomato pureed
- 1 big onion finely chopped
- 2 spoon ginger garlic paste
- 2 green chillies
- 1 tbsp yoghurt
- 1/2 tbsp cinnamon powder
- 2 tbsp olive oil
- Salt

Instructions
- Cut tofu in 1 inch cubes & put it in hot water
- Wash spinach leaves, blanch & grind it into a coarse puree adding green chili.
- In a wok, heat olive oil & add tej patta & black cardamom
- Once they crackle, add onions & saute till soft.
- Now add ginger-garlic paste. Saute for 5 mins.
- Now add paprika & salt.
- Now add tomato puree
- Cook till oil separates.
- Now add Spinach puree into it. Cook for 5-7 mins, don't put the lid
- Now add tofu cubes & mix well. Add cinnamon powder & garam masala
- Now add yoghut & again cook for 5 mins.
- Your healthy Spinach Tofu is ready to be served 🙂
