Spinach is

Ingredients & Quantity
  • 500 gram Spinach
  • 1 tsp cumin seeds
  • 1 tsp carom seeds(ajwain)
  • Pinch of asafetida
  • Roasted cashew nuts(20 -30)
  • Coriander leaves
  • Pomegranate powder( can use mango powder also)
  • 1 cup hung curd( thick curd without water – use muslin cloth, put curd and hang it for 12 hours so remove water)
  • Oil for heating
How to cook?
  1. Heat oil, sauté carom seeds, cumin seeds, asafetida and already blanched and chopped spinach. Sauté it till the whole water evaporates and it becomes a soft lump.
  2. For stuffing: Roast cashew nuts and then beat it to form a coarse powder ,let it cool down add freshly chopped coriander leaves, roasted cumin powder, mango/pomegranate powder.
  3. Mix spinach mixture with hung curd and fill the stuffing.
  4. Sallow fry, serve hot with tomato chutney.
