Spinach corn quesadilla is a twist to the classic mexican dish. The pan toasted tortillas filled with cottage cheese, spinach and corn makes it a very healthy dinner meal for kids. The high protein quesadilla are easy to make and will be finished in no time!!

Ingredients
- For the tortillas: 1 cup flour maidaÂ
- 1/2 tsp salt
- 1 tsp oil
- Water for kneading the dough
- For the stuffing: 1bunch Spinach
- 1/2 cup corn kernels
- 1/2 cup grated paneer
- 1/2 cup mozzarela cheese
- Black pepper as required
- Salt
- For the Salsa: 1 medium tomato finely chopped
- 2-3 tablespoon onion finely chopped
- 1 tablespoon lemon juice
- Pinch of dried oregano
- Black pepper as required

Instructions
- For the tortillas: Take flour add salt and oil and knead a soft dough and keep aside.
- For the stuffing: Wash the spinach nicely then boil it for 4-5mins. When cooled down squeeze out the water & finely chop it.
- Boil the corn for 4-5mins and keep aside.
- In a bowl add chopped spinach, corn, grated paneer, mozzarela cheese, Salt and pepper mix it well and keep aside.
- For the salsa: Take a bowl mix all the ingredients tomatoes, onions, lemon juice, salt and pepper and keep aside.
- Making of the tortillas: Take the dough divide it into equal proportion. Roll it out in a circle.
- Heat non stick pan add few drops of oil then cook the tortilla from both the sides on medium heat.
- Add the stuffing on one side of the tortillas then fold it in half and cut it from the middle.
- Repeat the same process for making rest of the quesadillas.
- Serve with ketchup, mayonnaise and salsa.
Notes
You can also add stuffing of your choice like mushrooms, broccoli and more.
