Ingredients
- 70 gm Spaghetti (whole wheat)
- 1/2 tsp Salt (or as per taste)
- 2 tbsp Olive Oil (Extra Virgin )
- 5-7 cloves Garlic (chopped)
- 1/2 Cup Onions (sliced)
- 1/2 Cup Mushrooms
- 1 Cup Baby Spinach (chopped)
- 1/2 tsp Salt (or as per taste)
- 1/2 tbsp Oregano
- 3 tbsp Ricotta Cheese (fresh)
- 2 tbsp Cheddar Cheese
- 1 tbsp Lemon Juice (whole)
- 1 tsp Black Pepper (for sprinkle)
- 5-7 Cherry Tomato
- 5-6 Basil leaves (for garnish)

Instructions
- Heat water in a large pot
- Add 1/2 Tbs Salt and 1/2 Tbs Olive oil
- 70 gms Whole wheat Spaghetti
- Heat Extra virgin olive oil in a pan
- Put chopped Garlic, Cook for 3-5mins
- Add onions and cook till soft
- Then add Mushrooms and cook till it become soft and changes colour
- Add chopped Baby spinach and cook till just soft(do not overcook)
- Add salt and oregano, toss nicely
- Now put Ricotta cheese and cheddar cheese and mix well and cook for 2mins
- Strain the boiled pasta and mix with the sauce
- Sprinkle some Black pepper, freshly ground
- Add ½ cup pasta water to thicken the sauce and let everything combine well and cook for 2-4mins
- Now cut the cherry tomatoes in half and plate the pasta
- Sprinkle some oregano, olive oil and Garnish with Basil leaves
- Serve with Garlic Bread or just like that
Recipe Notes
- You can use regular pasta instead of whole wheat.
