  • Heat water in a large pot
  • Add 1/2 Tbs Salt and 1/2 Tbs Olive oil
  • 70 gms Whole wheat Spaghetti
  • Heat Extra virgin olive oil in a pan
  • Put chopped Garlic, Cook for 3-5mins
  • Add onions and cook till soft
  • Then add Mushrooms and cook till it become soft and changes colour
  • Add chopped Baby spinach and cook till just soft(do not overcook)
  • Add salt and oregano, toss nicely
  • Now put Ricotta cheese and cheddar cheese and mix well and cook for 2mins
  • Strain the boiled pasta and mix with the sauce
  • Sprinkle some Black pepper, freshly ground
  • Add ยฝ cup pasta water to thicken the sauce and let everything combine well and cook for 2-4mins
  • Now cut the cherry tomatoes in half and plate the pasta
  • Sprinkle some oregano, olive oil and Garnish with Basil leaves
  • Serve with Garlic Bread or just like that

Recipe Notes

  • You can use regular pasta instead of whole wheat.
