Ingredients & Quantity
  • 2 Large Potatoes - peeled, diced into cubes
  • Salt – to taste
  • Oil – 1 tbsp
  • Red Chilli Powder – to taste
  • Cilantro – finely chopped
  • Cumin Seeds – 1 tsp
  • Turmeric Powder – ¾ tsp
  • Coriander Powder – ¾ tsp
  • Ginger paste – ½ tsp
  • Juice of half a lime
  • 2 Green Chillies - finely chopped
How to cook?
  1. Cover the potatoes in cold salted water, then bring to the boil. Simmer for 5 mins, until just tender.
  2. Drain and allow to steam dry for a few mins.
  3. Heat the oil in a frying pan. Once the oil is hot, add in the cumin seeds and allow them to sizzle
  4. Add ginger paste, turmeric powder, red chilli powder, salt, green chillies and coriander powder and fry it for a minute until fragrant
  5. Add potatoes and toss well so they are coated in the spices. Gently fry for 5-10 mins until slightly golden
  6. Add cilantro and lime juice and mix well
