Masala brinjal can be done in different ways. I always try to use less spices and less oil. I preferred small sizes eggplant. Let's see how to make.

Ingredients
- 250 gm Brinjal
- 1 tbsp Onion Paste
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1 tbsp Tomato Paste
- 1 tsp Turmeric Paste (raw)
- 1 tsp Cumin (or paste paste)
- 1 tsp Coriander Powder
- 1 tsp Turmeric Powder
- 1 tsp red chili powder
- 1/4 cup Curd
- 2 tbsp Mustard Sauce
- 2 tbsp Mustard Oil
- 1-2 tsp Salt (or as per taste)

Instructions
- Wash and cut the brinjal lengthwise. Rub inside with turmeric powder, chilli powder and salt.
- Shallow fry with 1 tbsp mustard oil. Cover and cook until soft. Then keep aside.
- Take another pan add oil, onion paste, ginger garlic paste and tomato paste. Saute for a few minutes until brown. Add cumin powder, coriander powder, raw turmeric paste and salt.
- Stir continuously then add curd and mix properly. Then add the masala to cooked brinjal. Sprinkle with little water to combine the spices. Now garnish with mustard sauce, fresh coriander leaves and serve.
