sooji kakara pitha is a typical odia dish popular in the state of odisha, these are mostly prepared during festivals and offered in puja as prasad, these are delicious, tasty and healthy.

Ingredients
  

  • 1/2 cup semolina
  • 1 1/4 cup water
  • 1/4 cup Sugar
  • 1/2 teaspoon green cardamom powder
  • 1 tbsp oil
  • for stuffing:
  • 1/2 cup grated fresh coconut
  • 1/4 cup Sugar
  • 1/2 teaspoon cardamom powder
  • oil for deep frying

Instructions
 

  • to make stuffing: in a frying pan, add grated coconut, sugar and cardamom powder
  • fry it until sugar melts and the mixture becomes little dry
  • turn off the flame and keep it aside

  • to make outer layer: in another pan add water and sugar, boil it
  • when it starts boiling, add semolina stirring continuously to avoid forming lumps
  • add oil and cardamom powder
  • cook this mixture for a minute
  • remove from flame and keep aside

  • wait till the dough cools down to room tempreture
  • knead for few seconds to make the dough soft
  • make small balls from the dough, flatten slighlty and put stuffing to it, then roll it again to make a ball

  • make the balls into flat shape in between your palms

  • heat oil in a kadai and deep fry the flatten balls on medium flame till it turns golden brown from each side
  • kakara pitha is ready, serve hot or cool
