Shukto is a traditional recipe of Bengal. Main course and some of the Bengali family frequently cook this recipe. There is variety of Shukto recipe. This recipe which I had one of my relative's house. People make Shukto in different style, some of them add milk, coconut milk, some them without milk. Spices also vary region to region. Some of them use for tempering panch phoran some of them use radhuni, some of them use mustard seeds. For gravy people use couscous paste or mustard paste, some of them use both the paste. At last some of them add roasted panch phoran paste, other people add radhuni paste. People also use different types of badi. All vegetables cut in same sizes some of them avoid coloured vegetables. So we can't argue with people.

Ingredients
- 2 drum stick cut into 2 inches long
- 10-12 piece papaya same size
- 8-10 piece brinjal same size
- 10-15 piece potato
- 10-15 piece raw banana
- 2 tsp Ginger paste
- 1/2 cup couscous paste
- 12-15 piece badi
- 10-15 piece bitter gourd
- Mustard oil as required
- 1 tsp five spice masala whole
- 2-3 whole red chilli for tempering
- 1 tbsp pure ghee
- 1 tsp green chill paste
- 1/2 tsp Sugar
- Salt

Instructions
- Take a frying pan add oil and fry bitter gourd. Keep aside then fry the badi keep aside then fry other vegetables. Brinjal, papaya, raw banana, potato, drum stick keep aside.
- Now add 2 tsp oil add whole red chilli, whole five spice masala and ginger paste couscous paste, salt and 1/2 tsp sugar. Add 1/2 glass water and close the lid and cook for five minutes. Add all fried vegetables. At last add bitter gourd and ghee.
- Ready to serve with steam rice.
Notes
Good for health. Never use turmeric powder, red chilli power, any other garam masala, asafoetida, garlic or onion. Try to to cook with mustard oil.
