Yield / Serves
4 medium sized sweet potatoes
1 tsp ghee
3/4 cup water
4 tbsp sugar or to taste
1/4 tsp cardamom powder
a few strands of saffron
2 tbsp chopped nuts ,with 2tbsp roasted melon seeds
Clean and wash sweet potatoes and pressure-cook for 3 to 4 whistles. Allow the steam to escape before opening.
2. Peel and mash the sweet potatoes and keep aside.Heat the ghee in a non-stick pan, add the mashed sweet potatoes and sautÃ© on a medium flame for 2 to 3 minutes.
3. In other pan Add water, sugar and cardamom powder, mix well and simmer for 5 minutes.Pour this syrup into sweet potatoes and cook till ensure that the mixture is completely dry.
4. Add the saffron and mixed nuts and roasted melon seed.serve on leaf decorated with rose petals.
you can cook it in advance.Add nuts of your choice.
