Semolina Coconut Milk Halwa Panna Cotta With Raisin Praline

Panna cotta (In Italian - "cooked cream") is an Italian dessert of sweetened cream thickened with gelatin and molded. The cream may be aromatized with, coffee, vanilla, or other flavorings. Often served with a coulis of berries, or a sauce of caramel or chocolate or fresh fruits.
This is fusion recipe. In this recipe I have prepared semolina halwa using two flavors i.e. orange and cardamom. Halwa is prepared using coconut milk. Instead or cream I used full fat coconut milk and regular milk, reduced to half. Combined both the recipes and panna cotta is been prepared. Served with fruits and praline.

Ingredients
- Fine Semolina or Sooji – 3 tbsp.
- Ghee – 1 ½ tbsp.
- Sugar – 2-3 tbsp. for coconut milk mixture. + 2 tbsp for Halwa
- Warm Coconut Milk – 1 Cup + 1cup for Halwa + ¼ cup for preparing kesar/saffron mixture
- Warm Full Fat Milk – 1 Cup
- Cardamom powder – ½ tsp for Halwa + ½ tsp for coconut + milk mixture.
- Small raisins – 5-6 roughly chopped.
- Orange Zest – 1 tsp
- Saffron Strands – 1 tsp
- Veg Gelatin – 1tsp
- Cold Water – 2 tbsp. for blooming gelatin
- For Praline – Sugar –3 tbsp
- Lemon juice – ½ tsp
- Raisins – 1 tsp roughly chopped or broken
- For garnishing – Pomegranate Arils – ½ tbsp.

Instructions
- Kesar milk Mixture - In a small bowl take ¼ cup warm coconut milk. Add kesar or saffron strands. Mix well.
- Semolina Halwa - Heat pan. Add fine semolina or sooji. Dry roast on low flame till it gets golden brown color. It will take 8-10 minutes.
- Add Ghee. Mix well.
- Add sugar and cardamom powder. Mix well.
- Add 1 cup warm coconut milk and half of the kesar milk mixture. and mix well for 1 minute. Switch off the flame.
- Add finely chopped raisins and orange zest. Mix well. Halwa is ready
- For Praline ââ¬â In a pan take sugar. Let it melt on low flame. Donââ¬â¢t stir it until sugar melts completely.
- Add lemon juice and chopped raisins. Stir it. Switch off the flame.
- Pour this mixture immediately on silicone mat or greased pan. It will harden after a minute. Cut or break it into small pieces. Use it for garnishing Panna Cotta.
- For Coconut and Milk mixture ââ¬â In a thick bottom sauce pan or non-stick pan take coconut milk and full fat milk.
- Stir gently. Simmer, stirring occasionally until it gets a desired consistency. It should be little thick and reduced by about half.
- Add sugar, Cardamom powder and remaining kesar milk mixture. Stir. Switch off the flame.
- Add 3-4 tbsp. prepared semolina halwa. Mix gently.
- Panna Cotta - In another bowl take Veg Gelatin. Add cold water. Mix well keep aside for 2-3 minutes. Let it bloom.
- In a saucepan add this bloomed gelatin mixture. Let it dissolve.
- Add immediately in Semolina-coconut milk mixture. Mix until it incorporates with each other. This process should happen quickly.
- Add this mixture in glasses or bowl. let it set.
- Keep in the fridge until chilled. Garnish with pomegranate arils and praline.
- Serve chilled.
