Schezwan chili potatoes fried crisp potatoes in a spicy and hot schezwan chilli sauce. This recipe is Indo Chinese.
Yield / Serves
3 large potatoes peeled n sliced
1 capsicum cube sized
4 green chillies broken
1 medium size onion roughly sliced
1 teaspoon dark soy sauce
1 teaspoon vinegar
2 tablespoons schezwan sauce
A big pinch ajinomoto
1 tablespoon ginger garlic paste
Salt to taste
1 teaspoon cornstarch +1/2 cup water (mixed both)
3 tablespoons cooking oil + for deep fry
Wash potatoes in water n take out out on kitchen toelHeat oil in wok n deep fry potatoes edges in heated oil till it done light brown. Transfer it on absorbing paper.
Heat oil in wok, add ginger garlic n saute for 2 minute. Add onion and capsicum saute for minute on high flame.
Add green chilies n saute for 30seconds. Add soy sauce, ajinomoto, salt and vinegar. Mix it well.
Add melted cornstarch in water in wok n saute for minute on high flame. Add schezwan sauce n mix it.
Add fried potatoes n mix gently.
Serve this hot
