Sindhis use Baingan in various ways....be it Sindhi curry, Mix veg, Aloo-matar-baingan, Bharwan baingan, Good-old-Bharta.
This is one traditional recipe that is made both in a kadai by shallow frying and in a pressure cooker.

- Grind the green coriander leaves, green chilli, garlic, dhania powder, red chilli powder, haldi and salt to a fine paste. Use as little water as possible to grind it.
- Cut the potatoes and brinjals into 1 inch pieces. In a pressure cooker, heat the oil on low flame. Add the masala paste and let it fry till it changes colour. Do keep on stirring in between so that it doesn't burn.
- Add as much water as needed for your gravy. It is often made very thick if having only with rotis and made thin when to be eaten with rice. Add the potatoes and brinjal pieces. Cook for 2-3 whistles on medium flame
Notes
In this same masala base , fried bhindi can also be added.
Left over rotis are cooked in it too to get SayalMani.
