- The butter should be at room temperature, whisk to make it smooth.
- Then add the icing sugar and whisk again. Then add the vanilla essence, cornflour and flour. Mix in to form a dough.
- Now chill it in the fridge for 10 minutes. Roll it out and cut the shapes using a cookie cutter
- I used another smaller cookie cutter on already cut raw cookie to get the hole in it.
- Bake them for 10 minutes in a preheated oven at 165„ƒ. Cool them.
- Now melt the white chocolate using a double boiler and spread it on the cookie. Spread the jam on it and cover it with the cookie with hole.
Recipe Notes
Additional Tips
- For ultra-clean edges, chill the cut-out cookie rounds on a baking sheet in the fridge for 15-20 minutes before baking to help them hold their shape.
- Swap strawberry jam with raspberry, apricot, or even a tangy lemon curd for a unique flavor twist and visual variety in your cookie platter.
- If you want a crispier texture, bake the cookies a minute or two longer, watching closely to prevent browning, as this will contrast nicely with the soft fillings.
- Once assembled, store the cookies in an airtight container with parchment paper between layers to keep the shortbread from softening due to the jam and chocolate.
