Sahur Special Tofu & Dischi Pasta Salad

Summers are at peak & this is the time when you want to relax at home; spend time with friends & family. Enjoying fruity chillers with light food & lying idle. These are the days when you don’t feel like doing anything, so do I :)You don’t feel like entering the Kitchen, you just look for some quick recipes so that you don’t have to stand in the kitchen & bare the heat, Since Ramadan is going on & people doesn't have that much time to cook & prepare in the morning. They also need energy to store for the whole day, so today I am sharing a super awesome & super healthy & yesssssssssssss super quick salad which you not only will love eating but also enjoy making for Sahur.

Ingredients
  

  • 1 cup Dishci You can use any shape of your choice
  • ½ red pepper
  • ½ yellow pepper
  • ½ capsicum
  • 1 small onion Optional
  • 6-7 florets of broccoli
  • ½ cup tofu
  • ½ cup sweet corn
  • ½ cup chickpeas Boiled
  • 1/4 tablespoon red chili flakes
  • ½ tbs freshly ground pepper
  • 1 tablespoon olive oil + more for garnish
  • 1 tablespoon curry powder
  • ½ tbs oregano
  • 1 lemon
  • Salt

Instructions
 

  • Cut all the peppers & onion in rough cubes. Cut tofu in big cubes
  • Now boil broccoli & sweet corn for 5 mins & rinse
  • Boil pasta with a pinch of salt & 2-3 drops of oil. Don’t overcook. Strain once cooked.
  • Now in a pan take some olive oil, put peppers &onion, sauté for 2 mins
  • Add curry powder, pasta, chickpeas, broccoli, tofu & sauté for 2 mins & put off the gas
  • Now take out the salad in a big bowl
  • Sprinkle oregano, chili flakes, lemon, pepper & salt & toss nicely
  • Add some olive oil & let it refrigerate for half an hour
  • Serve with your choice of bread or juice.

Notes

  • You can prepare everything at night & refrigerete. In the morning serve it for Sahur.
