About Russian Toast
Nowadays, Roadside version of Russian toast is all the rage. I so love it but wanted to go in for a homemade version.I finally nailed it after quite a few trials and errors.

Ingredients
- 1 Onion chopped finely
- 2 cup Vegetables assorted vegetables like capsicum, boiled beetroot, cucumber, tomato, or cabbage
- 1 cube Cheese grated
- 1 tbsp Mayonnaise
- 1/4 tsp Garam Masala
- 1/4 tsp Chaat Masala
- 1-2 tsp Salt or as per taste
- 8 slices Bread
- 2 tbsp Butter
- 1/2 cup Green Coriander Chutney

Instructions
- Chop all the vegetables as finely as you can.
- Add the salt, garam masala, chaat masala Mix up the filling ingredients gently till they all come together.
- Leave it to rest so that color of beetroot mingles evenly.Take the slices and apply little butter and little chutney on each side of slice.
- Add little bit of mayonnaise and 1/2 cube cheese.
- Take 2 slices and put in a tablespoon of the filling. Press it gently.Toast in sandwich toaster or iron tawa for 1 minute each side till golden brown.
- Sprinkle remaining cheese and mayonnaise on top.Cut into pieces and serve hot.
