Custard Nutty Rice Pudding

The pudding itself has a lots of flavor in it. You can get a nutty flavor along with little bit of a creamy and saucy taste of custard . The chilled one tastes yummy due to the addition of custard.

Ingredients
  

  • 1 cup basmati rice
  • 1 ltr milk
  • 1/2 cup Sugar
  • 1/2 cup water optional
  • 1 tablespoon cardamom powder
  • Handful of dry roasted nuts. cashew, almonds or pistachios
  • 1 tablespoon custard powder
  • 1/2 coarsely powdered dry roasted nuts.
  • Pinch of salt

Instructions
 

  • Soak rice for 1 hr and drain the excess water. Pat dry it and blend coarsely.
  • In a heavy bottom won, heat the milk and slowly add the rice powder by stirring vigorously so that no lumps are formed.
  • When the mixture gets little bit thickened, add milkmaid, custard paste (Mix 1 tbsp of custard powder with 2 tbsp of warm milk), sugar, salt.
  • At the meantime dry roast the nuts and blend half of it into a powder (coarsed) and keep remaining of it for garnishing.
  • At last add the powdered nuts and cardamom powder. Cook for few seconds until the pudding comes to a thick consistency.
  • Garnish with the left over nuts.Serve hot or chilled. It tastes much better when served chilled.

Notes

Adjust the consistency adding more water or milk.
