In this beginner friendly recipe, semolina (sooji, rava), is mixed with curd, cut veggies etc into batter and then thick shallow-fried pancakes like uttapams are prepared from it.

Ingredients
  

  • 250 gm semolina - rawa
  • 250 gm sour curd
  • 1 onion finely chopped
  • 1 capsicum finely chopped
  • 1 green chili finely chopped
  • Salt
  • Some finely chopped coriander leaves
  • Oil for shallow fry

Instructions
 

  • Heat wok and roast semolina till it change the colour and you will get aroma. Transfer it to a large mixing bowl.
  • Add curd n salt in it. Mix really well. Keep aside for 15minutes.

  • Heat 1 teaspoon oil on non-stick pan, place ladleful batter. Put some onion, capsicum, green chilies and coriander leaves on it. Let it cook till the utappam get golden brown from bottom. Flip and cook another side for minute. Transfer it to a plate.

  • Do same with semolina batter. Serve this utappam with your favorite chutney I like to have this with hot cuppa of tea. Ahaaa.

Notes

• Shallow fry from both the sides will give you more crispness from outside n soft from inside.
