  • Raw Mango – 1 Kg (Washed, wiped and cut into cubes)
  • Salt – to taste
  • Red Chili Powder – 4 tbsp
  • Turmeric Powder – 4 tbsp
  • Fenugreek Seeds – 5 tbsp
  • Coriander Seeds – 1 tbsp
  • Mustard Seeds – ¼ Cup
  • Cumin Seeds – 3 tsp
  • Fennel Seeds – ¼ Cup
  • Kalonji – 1 ½ tbsp
  • Mustard Oil – 4 Cup (Boiled and cooled down)
  • Asafoetida – to taste

How to cook?
  1. Take a big size bowl. Add raw mango cubes, turmeric powder and salt. Mix well, cover it and keep it aside for 2-3 hours
  2. Grind fenugreek seeds, coriander seeds, mustards seeds, cumin seeds, fennel seeds, kalonji into coarse powder.
  3. Drain out the excess water from raw mango cubes and add asafoetida, salt (if required), red chili powder.
  4. Mix 2 Cup of oil with the grounded powder. Now mix it with the raw mango cubes
  5. Cover it and keep it into the sunlight for 3 days. On the 4th day, add the remaining oil. Mix well and cover it and keep it into the sunlight for 8-10 days. After that you can use it as a pickle.
