Instructions

  • Peel and grate raw bananas on a plate.
  • Add crushed peppercorns, green chilli, peanuts and salt and mix well.
  • Heat some olive oil in a non-stick pan.
  • Spread a spoonful of banana mixture over and cook till golden and crisp from both sides.

  • Serve hot röstis with sour cream garnished with a parsley sprig.

Recipe Notes

Additional Tips

  • For extra crispiness, squeeze out as much moisture as possible from the grated raw bananas before mixing with the other ingredients—this prevents sogginess and helps achieve a golden crust.
  • If you prefer a tangier flavor, add a teaspoon of freshly squeezed lemon juice or a sprinkle of amchur (dry mango powder) to the mixture just before forming the rosties.
  • To make this dish vegan, swap out the cream with a plant-based alternative such as coconut cream or cashew cream, which will also add a subtle richness.
  • Shape smaller, bite-sized rosties for a party appetizer and serve them with a cooling mint-coriander chutney or tangy tamarind dip for enhanced flavor contrast.
