If required add extra water and mix well to make sure it tha thick but spreadable consistency.
Heat a non -stick tawa over medium heat.
Meanwhile add eno to batter and mix well.
Apply few drops of oil with the help of tissue paper on hot tawa.

Drizzle aap of oil around uttapam.Tha uttam should be thick.
Top the uttam with prepared toppings and cook cover on medium heat.
Once the bottom has turned golden brown(for approximately 2-3 minute),drizzle half a tsp of oil over the toppings (to prevent it from sticking to the tawa) and flip the pancake to the other side (approximately 1-2 minute).
When the other side is cooked, remove the uttapam from the tawa and serve hot with coconut chutney.

- For variation used mixed vegetables for topping.
- Butter milk can be used in place of curd.
