Ingredients
 

  • 1 cup Sooji or rava rava
  • 1 cup Sour Curd or dahi dahi
  • 1-2 tsp Salt or as per taste
  • 1 tsp Eno
  • Topping for
  • 1 medium Onion finely chopped size
  • 1 medium Tomato finely chopped size
  • 1/4 leaves Coriander chopped
  • Oil for making uttapams
  • Oil as required for making uttapams

Instructions
 

  • In a bowl add rava, sour curd and salt.
  • Mix well using spoon,slowly add water little by little(approximately 1cup)until batter has thick .(Like pancake batter).
  • Keep aside for 20 minutes.
  • Mix all the topping together in a bowl and keep it ready.
  • After 20 minutes check again for consistency.
  • Rava absorbs water as time goes by and due to that batter becomes thick after some time .
  • If required add extra water and mix well to make sure it tha thick but spreadable consistency.
  • Heat a non -stick tawa over medium heat.
  • Meanwhile add eno to batter and mix well.
  • Apply few drops of oil with the help of tissue paper on hot tawa.
  • Lower the heat and pour a ladle of batter and spread lightly.
  • Drizzle aap of oil around uttapam.Tha uttam should be thick.
  • Top the uttam with prepared toppings and cook cover on medium heat.
  • Once the bottom has turned golden brown(for approximately 2-3 minute),drizzle half a tsp of oil over the toppings (to prevent it from sticking to the tawa) and flip the pancake to the other side (approximately 1-2 minute).
  • When the other side is cooked, remove the uttapam from the tawa and serve hot with coconut chutney.

Recipe Notes

  1. Before chopping  deseed the tomatoes.
  2. For variation used  mixed vegetables for topping.
  3. Butter milk can be used in place of curd.
  4. Do not allow the rava + curd mixture to sit for more than 30 minutes. 
  5. Allow the uttapam to get cooked well on medium heat before flipping it over.
