Rajgira paratha (amaranth) Rajgira is an amazing food for weight loss. In hindi it is called ramdana. Amaranth is high in protein and it has nutrients like calcium, iron, magnesium phosphorus and potassium. It has low calorie and it is gluten free. I made Rajgira paratha which can be served during fasting period. I soaked the seeds then made a paste with adding peanuts, green chilies, coriander leaves and rock salt. Then mixed with boiled potatoes and boiled arbi which is perfect for any vrat (fast) or other fasting. Other than fasting also it can be consumed in our normal diet. I made a coconut chutney with adding fresh coconut, peanuts, green chilies, coriander leaves, lemon juice and rock salt.
