Papad sabzi is a traditional recipe from Rajasthan and my mother which can be prepared instantly by frying the papads and sautéing them in gravy made of curd onion-tomato. Today we have a quick and delicious gravy recipe of Papad sabzi for you all. Everybody love to eat.this recipe of papad sabzi is very quick to put together and tastes super scrumptious.
Serve this tempting sabzi with chapatti, missi roti, bajra roti or parantha.

Ingredients
- 1 tbsp Oil
- 1/2 tsp Jeera
- 1 tsp Mustard Seed
- 1 pinch asafoetida (asafoedia)
- 1 tsp Curry
- 1 Onion (chopped)
- 1 to Tomato (chopped)
- 1 tsp Ginger Garlic Paste
- 1 Green Chillies (chopped)
- 1/2 tsp Turmeric Powder (turmuric pwr)
- 1 tsp red chili powder
- 1 tsp Coriander Powder
- 1/4 tsp Salt (or as per taste)
- 1 cup Water
- 1/2 cup Curd (fresh)
- 4 Papad
- 1/4 tsp Garam Masala
- 1 tsp Fenugreek
- 1 tbsp Coriander (coriender)

Instructions
- fry the papads in oil,
- in a kadai heat, oil add mustard, jeera, pinch hing and few curry leaves.
- add onion and tomato , green chilli saute well
- also add ginger - garlic paste and saute well.
- add turmeric,red chilli powder and coriander powder,sal saute on low flame.
- add 1 cup water and curd.
- stir continuously on low flame till the curd combines well.
- Add fry papad roughly into curry. mix well.
- simmer for 2 minutes or more.
- add garam masala, kasuri methi and 2 tbsp coriander. mix well
- Serve to hot chapati, parantha.
