- For the spinach tortillas: 1 cup flour
- 1/4 tsp salt
- 2 tbsp oil
- 1 tsp baking powder
- 2 cup of fresh spinach
- For the stuffing: 1/4 cup each of red yellow and green capsicum
- 1/4 cup grated carrot
- 1/4 cup grated red cabbage
- 1/4 cup lettuce leaves
- 1/4 cup mushrooms cubed
- 1/2 tsp italian seasoning
- Pepper as required
- Salt to taste
- Red chilli flakes optional
- For the dip: 1/3 cup mayo
- 2-3 garlic cloves minced
- 1 tbsp chopped parsley leaves
- 1/2 tsp italian seasoning
- Pepper as required

- For the spinach tortillas: Boil water in a pan, add spinach leaves for 4-5 mins take it out squeze out the excess water and grind the spinach leaves and make puree of it.
- In a bowl add ingredients of the spinach tortillas add spinach puree in batches and knead a soft dough.
- Cover the dough with a plastic wrap and keep it in fridge for 30 mins.
- For the stuffing: Heat oil in a pan saute mushrooms and all three capsicum season with salt and pepper and keep aside.
- For the dip: take mayo in a bowl add rest of the ingredients mix it nicely ane keep aside.
- Making of the tortilla pinwheels: Take a small portion of a dough make a ball of it and roll out as thin roti.
- Heat a tawa cook the tortilla from both the sides nicely.
- Spread the prepared mayo dip all over the tortilla.
- Fill in the prepared stuffing along with grated carrot, red cabbage and lettuce leaves.
- Roll out the tortilla tightly.
- Cut the tortillas vertically into 1 inch of thickness.
- Serve with fresh salad and prepared mayo dip.

You can also add veggies of your choice.
