Ingredients
  

  • 1 1/2 Cup - Boiled Quinoa
  • 60 gms - green peas
  • 1/2 cup - Rice flakes soaked & drained
  • 1/2 onion - finely chopped
  • 2 - Green chilies finely chopped
  • 1 sprig of curry leaves
  • 1 small carrot - finely chopped
  • 3 beans - chopped
  • 2 sprigs of Coriander leaves - finely chopped
  • 30 gms - Groundnuts
  • 1 teaspoon - Mustard seeds
  • 1 teaspoon Turmeric Powder
  • 2 teaspoon - Coriander powder
  • Salt
  • Oil

Instructions
 

  • Boil the quinoa and peas, drain out the water and set aside

  • In a wok, heat some oil and add in the mustard seeds, wait for them to splutter

  • Next add in the chopped green chilies and curry leaves

  • Next add in the onion and sauté till they're translucent

  • Add the chopped veggies and cook till they are tender

  • Add in the groundnuts next, followed by the spice powders and salt to taste

  • Add the boiled quinoa, followed by the soaked & drained rice flakes
  • Add the coriander leaves and stir in all the ingredients

  • Check for spice & salt levels and adjust accordingly
  • Serve hot
