A muffin is an individual-sized, baked product. It can refer to two distinct items, a part-raised flatbread and a cupcake-like quick bread. flatbread is of British or European derivation, while the quick bread originated in North America. Both are common worldwide today.

Ingredients
- Eggs - 2
- Toasted Rolled Oats – 3-4 tbsp.
- Onion Medium– 1/2 finely chopped
- Green Chillies - 1 roughly chopped Medium Hot
- Finely chopped Coriander leaves - 1 tbsp.
- Turmeric powder - 1/2 tsp
- Tomato – 1/2 medium Finely chopped (without seeds and pulp)
- Salt

Instructions
- Preheat oven at 180 C.
- In a deep bowl take eggs, finely chopped onion, tomato, coriander leaves, green chillies, salt and turmeric. Whisk well.
- Add toasted rolled oats. Whisk again till it combined well.
- Fill silicone muffin cases two-thirds full and bake it in preheated oven for 18-20 minutes
- Serve hot.
