Ingredients & Quantity
  • pumpkin 1/2 kg
  • Finely chopped garlic 2 tsp
  • Finely chopped ginger 2tsp
  • Fenugreek seeds 1/2tsp
  • Chana dal 1tbsp
  • Whole red chili 2 nos
  • Salt to taste
  • Sugar or jaggery 1 tsp
  • Dry mango powder 1/1/2 tsp
  • Red chili powder 1 tsp or to taste
  • Turmeric powder 1/2 tsp
  • Coriander powder 2 tsp
  • Oil oil 1 tbsp
  • Coriander leaves chopped for garnishing
How to cook?
  1. Peel the skin, wash and cut into dices the pumpkin .
  2. Heat the oil in a wok or a non- stick pan, pop the fenugreek seeds and chana dal.
  3. Now add broken whole red chili, stir a minute, saute the ginger and garlic, add turmeric, coriander, and red chili and add the pumpkin immediately
  4. Mix well add salt cover and cook on low flame for 10 minutes.
  5. Remove the cover add dry mango powder, sugar then mix again very well, switch off the flame.
  6. Garnish with coriander leaves, serve with paratha/.
Notes

you can also add dried mango pieces instead of dry mango powder
