Protein rich Chocolate Cookie cake is a healthier thin cake with a mild crusty top and a delicious soft texture inside that is similar to the famous cookie cake sold in the market. This cookie cake is a vegetarian, vegan and a gluten free treat. It is baked using healthy ingredients like peanut flour, coconut flour, coconut sugar, chia seeds and coconut milk. Ingredients
- ½ cup peanut flour I used Sukrin Peanut Flour
- ¼ cup coconut flour
- ¼ cup cocoa powder
- ½ cup coconut sugar
- ½ tsp Baking powder
- A pinch of salt
- 1/3 cup oil
- ½ cup coconut milk
- 1 chia egg 1 tbsp chia seed powder with 3 tbsps of water
- 1 teaspoon pure vanilla extract
- 1/8 cup crushed roasted peanuts
- 1/8 cup chocolate chunks / chips

Instructions
- Prepare chia egg and set aside for 5-10 mins. It will start turning into a gooey liquid.(I used white chia seeds).
- Sieve peanut flour, cocoa powder, salt and baking powder in a separate bowl.
- Add coconut flour and mix thoroughly.
- In another bowl, dissolve coconut sugar in coconut milk. Add the chia egg, vanilla extract, oil and mix well.
- Add the dry ingredients to the wet ingredients in batches until no lumps are seen.
- Preheat oven @180c. Align a parchment sheet on a 9 inch brownie pan. I covered the pan on all sides using a parchment sheet. Hence there was no necessity to grease the pan with oil.
- Add the peanuts and Chocolate chunks of your choice to the batter and mix gently.
- Pour the batter into the prepared pan and gently spread / flatten it using a spatula.
- Bake @ 180 for 25-28 mins.
- Allow it cool completely and slice. Before serving, decorate with chocolate sauce or melted dark chocolate.
