Methu Vadai Aka Urad dal vada is a healthy and regular part of the breakfast among South Indians. In fact it is popular among the people of other countries too. Why donรขโฌโขt we make it even healthier by adding Proso millet and make it a complete part of our breakfast! Serve these hot proso millet methu vada with piping hot sambar / coconut chutney / Mint leaves chutney.

Ingredients
- 1 cup White Urad Dal whole
- 1/8 cup Millet proso
- 1/2 tsp Rice raw
- 1/4 tsp Cumin Seeds
- 1 pinch Asafoetida generous
- 1/4 tsp Pepper Corns roughly crushed
- 2 Green Chillies depending upon your taste chopped
- 1 tsp Ginger grated fresh
- 2 tsp Coconut grated fresh
- 2 tsp Coriander finely chopped
- 1-2 tsp Salt or as per taste
- Oil for frying

Instructions
- Clean and wash Urad dal, rice and proso millet together.
- Soak for 4 รขโฌโ 5 hours.
- Strain water completely from the soaked grains, add cumin seeds, salt and grind them without adding water. It should be fluffy and light, then only you will get soft and crispy vadas.
- Transfer the vada batter to a mixing bowl. Add all the other ingredients except oil.
- Mix well and check for the spices and salt.
- Heat oil in a frying pan; shape the vadas from the batter.
- Fry them in hot oil.
- Transfer to a serving plate and serve with your favorite accompaniment or as it is!
Recipe Notes
You can add finely chopped onions to the batter if you wish.
