About Prawn Thirmidor

Thermidor is a famous French Dish made with Lobster. I had picked up few fresh very large Prawns similar size of Lobster with claws. Thought of giving a try with this French Cuisine Thermidor. Original recipe of Thermidor is prepared with cooked lobster meat, egg yolk and Brandy and Mustard. These are the key ingredients in the sauce. These are stuffed into the Lobster shell and then cooked in oven. It is a pricy dish and involves extensive preparation. It’s the reason it is usually considered a dish of a special occasion. Traditionally, they are cooked with heads and shells on. My version of Giant Prawn Thermidor also requires lot of preparation right from cleaning, de shelling the meat and cooking the stuffing. But all these efforts will pay off on seeing that wide smile in the faces of your loved ones. Most of the ingredients are commonly available in our kitchen. Instead of Brandy I have used white wine and omitted egg yolk. Instead, used fresh cream and parmesan cheese.

Ingredients
 

  • 4 Prawns or shells giant with shells on
  • 2 tbsp Butter
  • 3 Spring Onion whites bulbs
  • 1 tbsp Garlic minced
  • 1 tbsp Lemon Juice
  • 1 tbsp Mustard Paste powder
  • 1/2 cup Cream fresh
  • 1/4 cup Parmesan Cheese grated the
  • 1 tbsp Black Pepper crushed
  • 1-2 tsp Salt or as per taste

Instructions
 

  • For deveining the Prawns, make a deep cut lengthwise down the outer curve of the prawn’s body keeping the shell on. You may use a sharp knife or a scissors. You will find a dark thin ribbon, pull it gently. De vein the prawns .
  • Keep the head shell & tail intact. There remains a black bag in the head of the prawns. They are actually sand eaten by the prawns. Give a cut over the head and remove the black bag from its head.
  • Now flatten the prawn like a butterfly. Wash the prawn in water. A soft orange brain remains under the head shell of big prawns. Be careful, this part should not be washed away while cleaning it in water. Wash it gently and pat dry the prawns.
  • Open the heads of the prawns and scoop out the brain cream and collect it in the bowl. It is the tastiest part of the prawns.

  • Sprinkle salt on the prawns. Now place these prawns on the steamer and steam it till the shells get pink in colour and the meat is almost cooked.

  • Cool the prawns and gently scoop out the meat without damaging the shells. Chop it coarsely.

  • Chop the spring onion and the shells out prawns.

  • Heat butter in a pan. Add garlic and chopped onion. Sautee it till translucent. Add the chopped meat. Cook till soft.

  • Add the chopped prawn meats, brain cream, lemon juice, black pepper and the mustard powder or mustard paste. Mix well.

  • Add the cream and cook everything well. Add cheese and check the seasoning. Add accordingly. add the mustard , mix well. The stuffing is ready.

  • Now spoon the stuffing in the shells of the prawn evenly. If you want it crusty may sprinkle bread crumb other wise bake in the pre heated oven or Air fryer for 10 mins.

  • In the mean time prepare the baked potatoes as side. Take 2 boiled potatoes, grated cheese, butter, chopped parsley, black pepper, milk, salt. Mix well and bake it in oven for 10 min 180degrees pre heated oven.

  • Serve hot with baked mashed potatoes. May spoon fresh cream and spring onion greens.
