Ingredients
- 3 potato peeled and sliced in cold water with salt
- 3 tablespoon grated processed cheese
- 1 tablespoon butter + 1tsp for greasing bakin tray
- For filling
- 2 tablespoon mashed potato
- 2 tablespoon soaked soya granules
- 1 tablespoon chopped spinach
- 2 tablespoon red capsicum chopped in fine cubes
- Few basil.leaves
- 1 tablespoon Italian seasoning
- 1 teaspoon chilli flakes
- Salt and pepper to taste
- 1 teaspoon oil
- 1 tablespoon finely chopped onion
- 1 teaspoon finely chopped garlic
- 2 tablespoon pasta sauce
- Some spring onion and red capsicum Julianne for garnishing

Instructions
- Grease a baking tray with butter. Line it with butter paper and again brush some more butter on it .Sprinkle some cheese over it.
- Arrange potato slices on it overlapping each other. Again sprinkle cheese over it and bskevjn a preheated oven at 180 degree for 15 mins.
- For filling heat a pan. Add oil and butter to it. Now add chopped onion saute for a min then add garlic.
- Cook for few mins then add soya granules, mashed potato and cook for a min
- Now add basil leaves , pizza sauce , red capsicum.salt pepper seasoning and chilli flakes and mix well
- Now switch off flame and add cheese
- Let this mixture cool down
- Now spread this mixture on baked potato
- Roll it and bake for another 15 mins at 200 degree till potato scallop become crisp and brown.
- Garnish with spring onion green and red capsicum julienne and serve
Notes
- Keep potato slices thin to ease folding of roll
- Keep filling atleast 1 cm less than actual potato sheet so that filling does not oozes out.
