Potatoes are a baker's secret weapon. They add wonderful moisture and structure to cakes. By mixing in cooked potatoes, you can eliminate some of the fat and add fiber and nutrients which make decadent cakes but the truth is, no one will know unless you tell them .This cake reflects that potatoes are not so boring browns , they can do wonder with white chocolate and become favorite of any child.

Ingredients
- 2 Potatoes medium sized
- 5 Dates pitted
- 3 Eggs
- 1 cup Granulated Sugar
- 1 cup Butter
- 1 tbsp Apple Cider Vinegar
- 1 tbsp Vanilla Essence
- 100 gm White Chocolate
- 100 gm Full Cream
- 1-2 drops Yellow Colour gel food inks blue n
- 1/2 cup Milk
- 1 tbsp Baking Powder
- 1 tsp Baking Soda
- 1/2 cup Powdered Sugar

Instructions
- First of all get your potatoes washed,peeled and cut into chunks.
- Now boil them with dates till they turn tender.
- Drain the water off if it's left with extra water and using a spoon or a mixer, mash the potatoes until no lumps (or very small ones) remain.
- Now cream up the eggs with butter and granulated sugar
- Add potato puree and apple cider vinegar and mix to give it a smooth n fluffy texture.
- Nextly mix flour,baking powder,baking soda in a separate bowl and gradually add to the egg mixture but keep mixing.
- Grease a otg resistant glass bowl and bake this batter on 160 degrees for 35 minutes. And let it cool on rack after baking.
- Till the cake cools down ,get your icing ready. Microwave the cream for 2 minutes and dissolve white chocolate pieces into it.
- Divide this cream, chocolate mixture into 2 parts ,1 is for white part and other part to divide again into yellow and blue icing. Drop a few drops of these colours separately and mix again.
- Cut the cake from the middle with the help of a round cake tin or a bowl. You can make the cake pops with the middle part or use in your desired way.
- Coat the circle with white chocolate icing 2 or 3 times one by one.
- Pour the coloured icing in an alternate manner as I did.
- Make dots with toothpicks and fill the inner circle with different colours to give a shape of pool and decorate with the favorite toys of your child.
- Serve chilled .
