Aloo masala is a nice compliment for any kind of dosa. The Aloo Masala can be rolled in the dosa or served as a side dish.

Ingredients
- 3 potatoes large, peeled, boiled and mashed
- 1/2 teaspoon mustard seeds
- 5-6 curry leaves crushed
- 3 green chilies finely chopped
- 1/2 cup coriander leaves chopped
- 1 teaspoon salt or as per taste
- 1/2 teaspoon turmeric powder
- 2 tablespoon oil

Instructions
- Heat oil in a pan, splutter mustard seeds, curry leaves when both stop spluttering.
- Add green chillies and saute for 15seconds. Add salt and turmeric powder saute for 10 seconds.
- Add mashed potatoes and mix really well. Finally add coriander leaves. When potatoes turn yellow in color. Switch off the flame.
- Potato filling for dosa is ready to fill in dosa or serve with dosa.
Notes
- You can also add 1 medium size chopped onion after spluttering mustard seeds and curry leaves (Step:1)
