Aloo masala is a nice compliment for any kind of dosa. The Aloo Masala can be rolled in the dosa or served as a side dish.

Ingredients
  

  • 3 potatoes large, peeled, boiled and mashed
  • 1/2 teaspoon mustard seeds
  • 5-6 curry leaves crushed
  • 3 green chilies finely chopped
  • 1/2 cup coriander leaves chopped
  • 1 teaspoon salt or as per taste
  • 1/2 teaspoon turmeric powder
  • 2 tablespoon oil

Instructions
 

  • Heat oil in a pan, splutter mustard seeds, curry leaves when both stop spluttering.
  • Add green chillies and saute for 15seconds. Add salt and turmeric powder saute for 10 seconds.
  • Add mashed potatoes and mix really well. Finally add coriander leaves. When potatoes turn yellow in color. Switch off the flame.
  • Potato filling for dosa is ready to fill in dosa or serve with dosa.

Notes

  • You can also add 1 medium size chopped onion after spluttering mustard seeds and curry leaves (Step:1)
