This spicy vegan potato curry is full on with flavour and easy to make with pantry staples.it goes awesome with crispy kachori.

Ingredients
  

  • 3 boiled potatoes
  • 1 teaspoon Red chilli powder
  • 1 tablespoon cornflour
  • 1 teaspoon cumin seed
  • 1 teaspoon mustard seed
  • 1 tablespoon Salt
  • 1 teaspoon deggi mirch
  • 1 teaspoon kasuri methi
  • 1 tablespoon butter
  • 1 cup tomato paste
  • 1 chopped onion
  • 2-3 green chilli
  • Crushed ginger garlic
  • 1 spoon oil

Instructions
 

  • Take potatoes cut in cube Shape ,wash it properly now in pan take 1glass water add chopped Potato n let it boil for 7-8min.keep aside
  • When potato cool completely ,coated with all dry ingredients mix well.

  • In pan let it butter melt n saute it until golden brown.

  • In same pan put oil let it heat now add cumin n mustard seed saute it ,add chopped onion n crushed ginger garlic saute it.
  • Add tomato n masalas cover with lid for 1min ,now add sauted potatoes n water let it cook for 5min.

Notes

U can try potato curry with Puri also.
