Potato Cauliflower Curry

Potato Cauliflower curry is a soul satisfying and comfort food of all ages. All time favourite and one of my fav vegetarian Dish. It Is easy and quick to prepare and taste delicious. It is a perfect vegetarian main course dish and goes well with roti, rice, chapathi etc.

Ingredients
  

  • 2 potatoes chopped
  • 2 cups cauliflower florets and leaves
  • ½ tsp Cumin seeds
  • 2 onion sliced
  • 1 green chilly slit
  • 1 teaspoon Ginger garlic paste
  • 1 to mato chopped
  • ½ tsp turmeric powder
  • 1 tablespoon Kashmiri red chilly powder
  • ½ tsp kitchen king masala
  • 3 tablespoon coriander leaves chopped
  • Water as required
  • 2 tablespoon oil
  • Salt

Instructions
 

  • In a pan heat oil. Add cumin seeds and saute for a min.
  • Add onion, green chilly, ginger garlic paste and saute till onion turns soft.
  • Add tomato and saute till it turns soft and mushy. Add turmeric powder, kashmiri Red Chilly powder and kitchen king masala and saute for a min.
  • Add potatoes, salt to taste and cook on medium flame for around 10 mins.
  • Add cauliflower florets and tender leaves, stir and mix well.
  • On medium heat cook for about 5 mins. Add water as required, cover the pan and cook till the potatoes and cauliflower is well cooked.
  • Adjust the gravy consistency as required and add chopped coriander leaves, give a quick stir and take off the heat.
