These two veggies - potato and bittergourd is my favourite combo. They go very well together. Potato Bittergourd fry is a perfect side dish with dal and rice and even goes well with rotis and chapattis. It is easy and quick to make with simple ingredients easily available in your kitchen. Try this combo and I am sure you will love it.

Ingredients
- 2 Bittergourd - 2 Medium Thinly Cut Into Desired Shapes bittergourd medium thinly cut into desired shapes
- 2 Potato peeled and thinly cut into desired shapes
- 1 Onion chopped
- 3 Green Chillies slit
- 1 tsp Ginger Garlic Paste
- 1 tsp Chilly Powder
- 1 tsp Turmeric Powder
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- 1/2 tsp Garam Masala
- 1-2 tsp Salt or as per taste
- 2 tbsp Oil
- 1-2 leaves Coriander chopped

Instructions
- Heat oil in a pan. Add the ginger garlic paste and fry for a min.
- Add the green chillies, onion and fry till onion turns soft. Add the masala powders and fry for a min.
- Add the bittergourd and the potatoes, mix well and fry on low-medium heat stirring it frequently till it is cooked completely which will take around 15-20 mins.
- Add chopped coriander leaves, mix well and take off the heat.
