A quick and super healthy salad prepared with quinoa, pears and sun-dried tomatoes tossed with a Balsamic vinaigrette . Some chopped jalapenos or a few drops of Chili oil adds that extra zing and balances out the sweetness of this dish.

Ingredients
- 1/2 cup Quinoa
- 1 Pear
- 1 Cucumber
- 2-3 Tomato sun dried
- 2 tsp Vinaigrette balsamic
- 1 tsp Extra Virgin Olive Oil
- 1/4 tsp Mixed Herbs of dried
- 1-2 jalapeno jalapenos
- 1-2 drops Chili Oil
- 1-2 tsp Salt or as per taste

Instructions
- Rinse the quinoa under running water for 2-3 minutes.
- Bring 1 cup of water to boil in a saucepan. Once it gets boiling, add the washed quinoa and reduce the flame to a simmer. Cook for 12-14 minutes.
- Once the water is absorbed, cover saucepan with a plate and remove from flame. Let it stand for 5 minutes. Uncover and fluff up the quinoa grains with a fork.
- Chop the pear and cucumber into bite sized pieces.
- Chop the sun-dried tomatoes into smaller bits.
- Take all the ingredients into a mixing bowl and toss gently to mix.
