Recipe Notes

Additional Tips

  • For a beautiful layered effect, pour half of the rose milk mixture into your molds, let it set slightly, then add chopped palm pieces before pouring the remaining mixture on top; this creates a visually appealing surprise when sliced.
  • If you prefer a lighter, vegan version, swap out dairy milk for coconut milk or almond milk and ensure your agar agar is plant-based; this will also add a subtle flavor twist that complements the rose and palm.
  • To enhance the aroma and color, add a few drops of natural beetroot juice for a gentle pink hue, or garnish with edible dried rose petals just before serving for an elegant presentation.
  • The pudding sets best when given ample time to chill—let it rest in the refrigerator for at least 3-4 hours or overnight for a firmer, creamier texture that makes unmolding easier and neater.
