Easy and fuss free one pot meal perfect for a lazy day and at the same time delicious and scrumptious.
Chicken - 200 gms
Rice - 1 cup
Mango - 1 riped
Ginger garlic paste - 1 tsp
Onion - 1 thinly sliced
Tomato - 1 slices in rounds
Green chillies - 1 chopped
Green and Red Capsicum - Â¼ cup chopped
Carrot - 1 small chopped
Beans - 2-3 chopped
Thyme - Â¼ tsp
Spring onion greens and coriander leaves chopped for garnish
Oil - 2 tbsp
Water - 2Â½ cup or as required
Salt, pepper and lemon juice for seaaoning the chicken.
Season the chicken with salt, pepper and lemon juice.
Wash the rice and soak them in water till further use.
Puree the mango reserving 5-6 small chunks of pieces.
Heat oil in a pan. Add the chicken and sear them on both sides till the chicken changes its colour.
Add the onions, ginger garlic paste and green chillies and saute for about 2 mins.
Add the rice, mango chunks and saute for 2-3 mins.
Add the chopped carrots, beans, capsicums, mango puree, water and let it come to boil.
Season with salt and add the thyme and cook for couple of mins.
Layer the thinly sliced tomatoes, cover and simmer till it is done.
Garnish with chopped coriander leaves and spring onion greens and serve.
