Ingredients
  

  • Chicken - 200 gms
  • Rice - 1 cup
  • Mango - 1 riped
  • Ginger garlic paste - 1 tsp
  • Onion - 1 thinly sliced
  • Tomato - 1 slices in rounds
  • Green chillies - 1 chopped
  • Green and Red Capsicum - ¼ cup chopped
  • Carrot - 1 small chopped
  • Beans - 2-3 chopped
  • Thyme - ¼ tsp
  • Spring onion greens and coriander leaves chopped for garnish
  • Oil - 2 tbsp
  • Water - 2½ cup or as required
  • Salt pepper and lemon juice for seaaoning the chicken.

Instructions
 

  • Season the chicken with salt, pepper and lemon juice.
  • Wash the rice and soak them in water till further use.
  • Puree the mango reserving 5-6 small chunks of pieces.
  • Heat oil in a pan. Add the chicken and sear them on both sides till the chicken changes its colour.
  • Add the onions, ginger garlic paste and green chillies and saute for about 2 mins.
  • Add the rice, mango chunks and saute for 2-3 mins.
  • Add the chopped carrots, beans, capsicums, mango puree, water and let it come to boil.
  • Season with salt and add the thyme and cook for couple of mins.
  • Layer the thinly sliced tomatoes, cover and simmer till it is done.
  • Garnish with chopped coriander leaves and spring onion greens and serve.
