One Pot Meal With Mango And Chicken

Ingredients
- Chicken - 200 gms
- Rice - 1 cup
- Mango - 1 riped
- Ginger garlic paste - 1 tsp
- Onion - 1 thinly sliced
- Tomato - 1 slices in rounds
- Green chillies - 1 chopped
- Green and Red Capsicum - ¼ cup chopped
- Carrot - 1 small chopped
- Beans - 2-3 chopped
- Thyme - ¼ tsp
- Spring onion greens and coriander leaves chopped for garnish
- Oil - 2 tbsp
- Water - 2½ cup or as required
- Salt pepper and lemon juice for seaaoning the chicken.

Instructions
- Season the chicken with salt, pepper and lemon juice.
- Wash the rice and soak them in water till further use.
- Puree the mango reserving 5-6 small chunks of pieces.
- Heat oil in a pan. Add the chicken and sear them on both sides till the chicken changes its colour.
- Add the onions, ginger garlic paste and green chillies and saute for about 2 mins.
- Add the rice, mango chunks and saute for 2-3 mins.
- Add the chopped carrots, beans, capsicums, mango puree, water and let it come to boil.
- Season with salt and add the thyme and cook for couple of mins.
- Layer the thinly sliced tomatoes, cover and simmer till it is done.
- Garnish with chopped coriander leaves and spring onion greens and serve.
