Ingredients
- 200 gm Chicken
- 1 cup Rice
- 1 Mango riped
- 1 tsp Ginger Garlic Paste
- 1 Onion thinly sliced
- 1 slices Tomato in rounds
- 1 Green Chillies chopped
- 1/4 cup Red Capsicum green and chopped
- 1 Carrot chopped
- 2 Beans chopped
- 1/4 tsp Thyme
- leaves Spring Onion Greens or coriander and coriander chopped for garnish
- 2 tbsp Oil
- 2 cup Water or as required
- 1-2 tsp Salt pepper and lemon juice for seaaoning the chicken., or as per taste

Instructions
- Season the chicken with salt, pepper and lemon juice.
- Wash the rice and soak them in water till further use.
- Puree the mango reserving 5-6 small chunks of pieces.
- Heat oil in a pan. Add the chicken and sear them on both sides till the chicken changes its colour.
- Add the onions, ginger garlic paste and green chillies and saute for about 2 mins.
- Add the rice, mango chunks and saute for 2-3 mins.
- Add the chopped carrots, beans, capsicums, mango puree, water and let it come to boil.
- Season with salt and add the thyme and cook for couple of mins.
- Layer the thinly sliced tomatoes, cover and simmer till it is done.
- Garnish with chopped coriander leaves and spring onion greens and serve.
