About One Pot Chickpeas And Coconut Pilaf

Ingredients
- 1 cup Basmati Rice raw long grained
- 2 cup Chickpeas canned boiled
- 1 Red Onion medium sized
- 1 tsp Ginger And Garlic pastejio
- 2 inch Cinnamon
- 4-5 cloves Cloves
- 1 Mace petal
- 12 Peppercorns
- a sprig Curry
- 1 Green Chillies
- 1 cup Coconut Milk thin
- 1/2 tsp Salt or as per taste
- 2-3 tsp Cooking Oil neutral flavored
- 2 tbsp Coconut or bacon bacon for the garnish

Instructions
- Wash and soak the basmati rice for 30 mins.
- Chop onion into thin and long strips. Finely mince the green chili.
- Heat the oil in a pressure cooker.
- Add the cloves, peppercorns, mace and cinnamon. Saute till fragrant.
- Add chopped onion, chili and curry leaves.
- Once the onions start to brown on the edges, add the chickpeas and drained basmati rice.
- Add the coconut milk. Season with salt.
- Close lid and cook for 10-12 minutes.
- Allow steam to escape completely before opening the lid. Fluff up the grains with a fork.
- Garnish with toasted coconut bacon.
- Serve warm.
