One Pot Chickpeas And Coconut Pilaf

Ingredients
- 1 cup long grained Basmati rice raw
- 2 cups canned/boiled chickpeas
- 1 medium sized red onion
- 1 tsp ginger and garlic pastejio
- 2 inch cinnamon
- 4-5 cloves
- 1 petal of mace
- 12 peppercorns
- A sprig of curry leaves
- 1 green chili
- 1 cup thin coconut milk
- 1/2 teaspoon Salt
- 2-3 teaspoon neutral flavored cooking oil
- 2 tbsp coconut bacon for the garnish
Instructions
- Wash and soak the basmati rice for 30 mins.
- Chop onion into thin and long strips. Finely mince the green chili.
- Heat the oil in a pressure cooker.
- Add the cloves, peppercorns, mace and cinnamon. Saute till fragrant.
- Add chopped onion, chili and curry leaves.
- Once the onions start to brown on the edges, add the chickpeas and drained basmati rice.
- Add the coconut milk. Season with salt.
- Close lid and cook for 10-12 minutes.
- Allow steam to escape completely before opening the lid. Fluff up the grains with a fork.
- Garnish with toasted coconut bacon.
- Serve warm.
