One Pot Chickpeas And Coconut Pilaf

The ultimate vegan comfort food prepared with aromatic long-grained Basmati rice, protein loaded chickpeas, goodness of coconut and mesmerizing South Indian spices. Makes an easy one pot meal for 3 people.

Ingredients
  

  • 1 cup long grained Basmati rice raw
  • 2 cups canned/boiled chickpeas
  • 1 medium sized red onion
  • 1 tsp ginger and garlic pastejio
  • 2 inch cinnamon
  • 4-5 cloves
  • 1 petal of mace
  • 12 peppercorns
  • A sprig of curry leaves
  • 1 green chili
  • 1 cup thin coconut milk
  • 1/2 teaspoon Salt
  • 2-3 teaspoon neutral flavored cooking oil
  • 2 tbsp coconut bacon for the garnish

Instructions
 

  • Wash and soak the basmati rice for 30 mins.
  • Chop onion into thin and long strips. Finely mince the green chili.
  • Heat the oil in a pressure cooker.
  • Add the cloves, peppercorns, mace and cinnamon. Saute till fragrant.
  • Add chopped onion, chili and curry leaves.
  • Once the onions start to brown on the edges, add the chickpeas and drained basmati rice.
  • Add the coconut milk. Season with salt.
  • Close lid and cook for 10-12 minutes.
  • Allow steam to escape completely before opening the lid. Fluff up the grains with a fork.
  • Garnish with toasted coconut bacon.
  • Serve warm.
