Lemon is one of the popular fruits used for making pickle and keeping the digestive system healthy. Ready-made varieties of lemon pickle have oil but traditional pickle of north India does not contain any oil. Indian lemons usually have thin fluid, whereas the lemon available are quite thick-skinned. Lemon pickle was always made with leftover peels after making lemonade. The yellow zest with pith is the most valuable though it needs more acids and longer time to soften.

Ingredients
- 1 kg Lemon
- 2 tbsp Rock Salt
- 1 tbsp Black Pepper
- 1 tbsp Cumin Seeds Powder
- 2 tsp Vinegar

Instructions
- First wash the lemons and wipe with clean cloth. 1/2 kg Cut in the ratio 1:8 small pieces.
- Another half kg squeeze into the lemon pieces.
- Grind with mortar roasted cumin seeds powder and black pepper.
- Mix rock salt, sugar and spices.
- Add vinegar again mix. Every half an hour mix twice or thrice.
- After 72. Hours
- After two weeks ready to serve.
Recipe Notes
I had twenty years old lemon pickle. Colour changed into dark and it was become medicinal properties. If anyone feels giddiness can chewy a piece and will feel better. So there’s no expiry of lemon pickle.
