So another experiment with melon😋 friends...
This time Musk-melon, I made with dates puree for weight watchers(including me) all left over flour mixed... almond, oats, ragi, jowari and wheat flour and topped with choco chips nd pistachios 😋
Lucky to be in Nashik..we get fresh fruits which are tasty beyond explanation. So my husband's friend was in Nashik for the first time and was so amazed to see boat loads of musk-melons in market, that he bought a dozen of the fruit. He gave 1/2 a dozen of musk melons to us (May be because he liked dinner or may be he must have realised that he got too many of them😉😉). We distributed some and ate some. Today last one was left and nobody wanted to eat more melon... I was sure it will go bad tomorrow... so made them into cupcakes which all will like and finish off with tomorrow morning tea ☕ some are already gone by now 🤗🤗

Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup Jowari or flour flour
- 1/2 cup Oats Flour
- 1/2 cup Almond Flour
- 1/2 cup Ragi Flour
- 3/4 Cup Curd
- 1/2 - 3/4 cup Desi Ghee or oil oil or
- 10-12 Dates or puree puree
- 1-2 tsp Salt of, or as per taste
- 1 tsp Baking Powder
- 3/4 tsp Baking Soda
- 1 1/4 cup Musk Melon chopped
- handful handful Pistachio Nuts or nuts chopped or any nuts
- to Choco Chips some sprinkle on top
- 1 tsp Cardamom Powder

Instructions
- Cook the choped musk melon in a pan. Till the look roasted.
- Cool and grind to paste.
- Clean and deseed dates. Soak them in some hot water for 15 minutes.
- After 15 minutes grind them to puree. If you can soak for longer time then better.
- Preheat oven to 200C for 10 minutes.
- Sift all the flour except for oats and almond. Wheat flour+ ragi+ jowari+ salt+ baking soda+ baking powder
- Mix all wet ingredients together oil +curd+ musk melon puree+ dates puree +cardamon powder and whisk them well.
- Gradually fold dry into wet ingredients. I use a steel spoon for mixing cake batter.
- Spoon the batter in muffin cups lined with muffin paper. If using a cake tin line them with butter paper.
- Sprinkle chopped pistachios or choco- chips on top to decorate
- Bake for 20-25 minutes or untill toothpick inserted come out clean.
- Cool completely. Coz they are very tender when hot.
