Mushroom do pyaza uses the onoin in double quantity hence the name "do pyaza" makes a perfect semi gravy side dish in any north indian meal.It is an ideal option for low calorie dish without compromising the taste. whatever the occasion pair it with any indian bread for scrumptious meal.

Ingredients
  

  • Mushroom- 250g
  • onion- 2 large chopped
  • onion- 4 small cut in to halves
  • tomato- 3 medium size
  • green chilli- 1
  • ginger- 1 inch
  • garlic cloves- 4-5
  • green cardamom- 1
  • bay leaf- 1
  • cumeen seed-1/2tspn
  • turmeric powder -1/8tspn
  • red chilli powder-1/2tspn
  • coriander powder- 1tspn
  • garam masala-1/2tspn
  • oil-1tblspn+2tblspn
  • Fresh cream- 1tblspn
  • sugar- 1/2tspn optional
  • water- 1/2cup
  • coriander leaves for garnishing

Instructions
 

  • Firstly cut mushrooms in to halves .finely chop 1 tomato,2large onion and cut 4 small onion in to halves,seperate its layers.
  • Grind remaining tomato,ginger,green chilli and garlic.
  • Now heat 2tblspn oil and shallow fry onion layers until light brown.Transfer them in to plate.
  • Heat 1 tblspn oil in the same pan.Add cumin seeds,green cardamom and bay leaf when they begin to sizzle add chopped onions and saute it until light brown.
  • Add tomato,green chilli,garlic and ginger puree and chopped tomato ,saute it until oil began to release.
  • Add red chilli,turmeric,coriander ,garam masala powder,sugar and salt.Mix well and cook for a minute.
  • Add mushroom pieces,shallow fried onions and 1/2 cup water, keep closed and cook for 3-4min.
  • Add Fresh cream ,mix well and serve hot.

Notes

  • In case you do not have small onions then use ordinary onions ,cut them into 4 equal parts and seperate its layers.
  • you can adjust the amount of red chilli powder to make it as spicy as you like it.
  • In this dish sugar is used to balance the sour taste of tomato.you can avoid it if you donot like even a mildest hint of sweet taste in gravy..
