Moringa leaves / Drumstick leaves are rich in iron and carries loads of health benefits . Highly recommended to treat anaemia , to boost immunity , for improvised eyesight . Moringa leaves 1 cup equals 300 ml
Butter 2 tablespoons
Onion 1 big finely chopped
Cumin seeds 1/2 teaspoon
Fennel seeds 1 teaspoon
Garlic finely chopped 1 teaspoon
Fresh cream 4 tablespoons
Vegetable stock 1 large glass
Salt as preferred
Black pepper powder as preferred
Kasuri Methi crushed 3/4 teaspoon ( optional )
Heat butter in a sauce pan . Crackle cumin seeds . Then add fennel seeds . When fennel releases aroma , add chopped garlic and chopped onions . SautÃ© till translucent and not until brown .
Add the cleaned , drained moringa leaves . SautÃ© for couple of minutes until raw smell leaves . Sprinkle vegetable broth now and then to soften the leaves while cooking . Donâ€™t overcook .
Switch off the stove . Allow the mixture to cool completely .
Blend the spinach mixture to a smooth purÃ©e . Adjust the consistency by adding warm vegetable stock . Season it with pepper and salt . Add fresh cream just before serving . Garnish with crushed dried fenugreek leaves if preferred for flavour .
