    Moong dal burfi or yellow lentil fudge is a very famous sweet in North India. For any festive occasion, this sweet take precedence over other sweets. To make this sweet yellow lentil soaked, ground, roasted in ghee for good 30-40 minutes. Added sugar, cardamom powder, and khoya give it richness and aroma. Making it requires a lot of patience but the outcome is worth it. Very delicious and nutty in texture. So let see how to make moong dal burfi.

    Ingredients
      

    • 1 Cup moong dal yellow lentil
    • 200 gm khoya
    • 1 Cup sugar
    • 1 Cup ghee clarified butter
    • 1 Tsp cardamom powder
    • 2 Tblsp sliced almond & Pistachio for garnishing
    • 3/4 cup water

    Instructions
     

    • First of all soak moong dal for at least 1 hour. After 1-hour wash and rinse soaked dal till clean water start leaving.
    • Grind this soaked dal till you get smooth consistency.
    • Take a heavy bottom kadhai and heat on medium low heat.
    • Add ghee and ground dal. Mix both together and stir till dal turns to golden color. This process take around 30-40 minutes.
    • Meanwhile, in other pan add sugar and water. You need to make 1 string syrup from it. Boil it on medium flame. After 5-6 minute take a spoon and check the syrup. Once it is ready,keep it aside.
    • Keep stirring it, there should not be any lump. After 40 minutes add khoya/mava.Mix nicely
    • Now add sugar syrup in the mixture and keep stirring it. It will start thickening, and once mixture starts leaving the sides of the pan por this mixture to a greased surface. Let it set for 1-2 hours. Cut them in desired pieces.
