Mocha Cake

My hubby wanted me to make mawa cake for his colleagues. I had already prepared dry ingredients, Mixed, sieved and ready,,,the night before.
But the mawa i bought had developed some white spots overnight,,,, so discarded the mawa, made few changes to the dry mixture and made mocha cake out of it.
Hubby's friends liked it very much with coffee. So that's how this mocha cake happened 😀😀

Ingredients
- Dry Ingredients; 1-1/4 cups wheat and all purpose flour
- 1/4 cup mocha powder see notes for recipe
- 1 teaspoon Baking powder
- Salt a pinch omit if you are using salted butter.
- Wet Ingredients; A little less than 1/2 cup Butter at room temperature
- 1 cup powdered Sugar
- 2 Â Whole Eggs see notes for substitute
- 1 teaspoon vanilla essence
- 1/2 cup warm Milk little more if required for the consistency

Instructions
- I've taken 1/2 cup wheat flour and rest Maida.
- Preheat oven @180C
- Sift dry ingredients 3-4 times.
- Beat butter and sugar till smooth and fluffy. Add other wet ingrdients and beat well.
- Add dry ingredients with wet in 2 portions. Mix gently. But do not over mix.
- Pour in lined muffin cups. Bake for 15-20 minutes. Mine were done in 15 minutes.
- Cool on wire rack. Frost if you like.

How to make mocha powder;
2/3 cup coffee powder
1/3 cup cocoa powder
Grind the two ingredients to fine powder. Store in dry container. Substitute for 2 eggs 2 tablespoon powdered Sabja seeds soaked in 1/2 cup water or milk + 1 tsp baking soda or 2btablespoon powdered flax seeds soaked in 1/2 cup water or milk + 1 tsp baking soda or 1/2 cup apple puree + 1 tsp baking soda or 1 teaspoon baking soda + 1/2 cup buttermilk, at room temperature.
